Meet Chef Johnny Hernandez
Johnny is the chef and entrepreneur behind True Flavors Catering, a company dedicated to culinary innovation and customer service. After attending the Culinary Institute of America in Hyde Park, New York, Johnny is the second generation of his family to operate a food business in San Antonio. Following in the footsteps of his father and mentor, Johnny brings his culinary training and family history in food to lead True Flavors' team of culinary artisans and service professionals.

Mark brings with him many years of experience in the catering business as the company’s Vice President. Responsible for managing the logistics of scheduling, marketing, and supporting all other areas of True Flavors, Mark sees his dedication to quality and impeccable service as the foundation for his personal growth and the growth of the business: "We elevate cuisine service from something you merely enjoy to service designed to meet and exceed your every expectation. Letty was instrumental in the development and growth of True Flavors with her brothers Mark and Johnny. She has over 25 years of customer service experience and for the past 16 years Letty has helped manage the day to day activities of the business. As the Corporate Secretary, her organizational, administrative and clerical duties have become an asset not only to the daily activities but also long term projects. Letty’s attention to detail, dedication and talent for creativity shines throughout.
Denise Hernandez - VP of Development
Denise joined the True Flavors team in 2008, overseeing accounting, customer service, sales and marketing. With over 20 years experience in the food industry, Denise has worked with a wide range of companies marketing private-label brands, developing and implementing strategic business plans, and leading substantial revenue and profit growth. She brings a broad base of experience and expertise in helping to steer the development of True Flavors through training, organizational development, benefits administration, management leadership development, and conflict resolution. Denise's key to success has been "the empowerment of great people to take risks, lead change, and make a difference."
Executive Chef Michael Mata
Leading the innovative culinary team at True Flavors and Tejas Steakhouse is Executive Chef Michael Mata. A San Antonio native, in 1997 he made the decision to pursue a career in culinary arts – blending childhood memories with his love and passion for food. He has had much success since then building his career with San Antonio’s finest Chef’s and restaurants such as; Pesca at Watermark Hotel & Spa and Las Canarias at La Mansion. He was the opening Chef for Yokonyu where he mastered the traditional art and technique of Sushi. He has worked alongside John Besh and Steve Mc Hugh at Luke, San Antonio’s premiere Cajun Restaurant. And most recently held the position of Executive Chef at the historic St. Anthony Hotel, where he personalized every unique clients experience creating menus from around the world.
Edna - Culinary Sales Director
Edna joined True Flavors in March 2017 as Culinary Sales Director. She attended University of Texas El Paso then relocated to San Antonio where she earned her degree online and holds a Bachelor of Arts in Business Administration from American Intercontinental University. She has over 15 years of experience in sales, hospitality, catering, event planning, and marketing. Prior to joining the team, Edna worked for several 4 Diamond luxury hotels including Westin Riverwalk, Eilan Hotel, Omni La Mansion del Rio, and Mokara Hotel & Spa. Edna's experience provided her the creativity, talent, and imagination to engage with her clients on every level of planning a corporate or social event. Edna also played instrumental roles in the pre-development team at Pearl Brewery and the Culinary Institute of America as marketing, media relations, and event planning coordinator.
Tom - Catering and Sales Manager
Tom Ozene is the Catering and Sales Manager for True Flavors and Tejas Rodeo Corporate Events division. Tom's a San Antonio native with over 20 years of experience in the food and hospitality industry. Tom joined the Tejas team in 2013 as the General Manager, and has since booked events as large as 3,000 guest who have enjoyed our internationally known live rodeo, custom created menus by Chef Johnny Hernandez and interactive activates. Prior to joining the Tejas Rodeo / True Flavors team, Ozene worked for the Hotel Havana & Marriott International as the General Manager overseeing the Food and Beverage and daily operations.
Angelica - Catering Sales Coordinator
Angelica joined the True Flavors team in November 2016 as an office administrator but was quickly promoted to Culinary Sales Associate due to her desire and obvious talents for event planning and producing. She has successfully executed several high profile events for True Flavors Catering and has a strong passion for her customers and the event planning and culinary industry. Angelica has over 10 years of experience in several industries to include Wine & Beverage Management, Account & Client Retention, and as a Personal Cooking Coach where she facilitated group classes and even personal, private cooking lessons. Angelica has a strong passion for event planning, event executing, people and the culinary industry. Her talents also include organization, attention to detail, creative imagination, concept design and contagious enthusiasm.
