JOHNNY HERNANDEZ

President

Chef Johnny Hernandez is a celebrated chef, entrepreneur, and founder and President of Grupo La Gloria and True Flavors Catering. He is one of the premier Mexican cuisine chefs in the United States and a recognized authority on Mexican cuisine and culture. Chef Hernandez was born and raised in a community of first-generation Mexican American families and grew up surrounded by the foods and traditions of interior Mexico that made their way across the border. Encouraged by his father to become a chef, he attended the prestigious Culinary Institute of America in New York.  Johnny began his career at several exclusive resort destinations, including the Mirage Hotel & Casino in Las Vegas, Nevada and the Four Seasons Biltmore in Santa Barbara, California.  Upon returning to San Antonio in 1994, he opened his first venture, True Flavors Catering which earned national recognition for catering excellence.

His culinary ventures have since expanded to become Grupo La Gloria, a diverse and growing portfolio of signature restaurants and culinary projects that include Burgerteca, The Fruteria, and La Gloria.

MARK HERNANDEZ

Chief Operations Officer​

With his more than 25 years in food service operation experience that includes food preparation, food distribution, banquet and catering services, Mark oversees many of the day-to-day operations of True Flavors Catering. He manages the logistics and scheduling of events, marketing and all other event preparations. Mark sees his dedication to quality and impeccable service as the foundation for his personal growth and the development of the business,  "We elevate cuisine service from something you merely enjoy to service designed to meet and exceed your every expectation. This is the basis of our success and has earned us the reputation we continue to build our business on."

Mark believes in serving his community and he volunteers and is affiliated with several organizations that include the City of San Antonio Small Business Advisory Commission, San Antonio Hispanic Chamber of Commerce, National Association of Catering Executives, International Special Events Society, Texas Restaurant Association, San Antonio Restaurant Association, The Greater Chamber of Commerce, and CEO Foundation. Mark enjoys spending his spare time with his family and friends.

DENISE HERNANDEZ

Senior Corporate Advisor

With more than 20 years of experience in the culinary industry, Denise Hernandez joined True Flavors in 2008 as Vice President of Operations, and now serves as their Senior Corporate Advisor since becoming the Owner and CEO of  The Eatery Culinary Group in 2021.


Her extensive expertise ranges in management of accounting services, customer service, sales and marketing of private-label brands, developing and implementing strategic business plans, and leading projects that continue to garner substantial revenue growth.

 

Now the Owner and CEO of The Eatery Culinary Group, she continues to advise True Flavors on its advancement through continued training, organizational development, benefits administration, management leadership development and conflict resolution.

 

Denise's key to success has been the empowerment of great people to take risks, lead change, and make a difference.


She is deeply dedicated to the City of San Antonio and its surrounding communities. She strives to give back by volunteering with various organizations and participating on boards by giving her time, talent, and treasure. Denise is a former co-chair of the distinguished Leadership San Antonio program. She is a current board director and past Chairwoman of the San Antonio Hispanic Chamber of Commerce - the nation’s first and largest five-star accredited Hispanic Chamber, a board member of Visit San Antonio, Greater SATX, CBC Church, and Federal Reserve Bank of Dallas.

LETICIA HERNANDEZ

Corporate Secretary

For over 25 years, Leticia has worked alongside her family in the development and expansion of
True Flavors. She has been instrumental in ensuring that daily operations of the business are
executed by serving in her capacity as Corporate Secretary. Her support of executive-level staff
and her service as a liaison among administrative staff have been crucial to day-to-day operations
and the execution of long-term projects. Leticia’s exceptional customer service, attention to detail,
dedication and talent for creativity shine throughout the organization.


Leticia is dedicated to the San Antonio community and volunteers her time with various
organizations.

JORGE AZUA

 Executive Chef

Chef Jorge began his career with True Flavors in 2004 and has an extensive background in
designing and implementing unique cuisine for various events. He has over 17 years of
experience in banquet facility oversight, menu development and back of the house management.
Chef Jorge thrives on creating a variety of exquisite meals in fast-paced environments for events
serving from 25 to 5,000 guests. He works hard to ensure he maintains maximum productivity
from our kitchen staff including chefs, line cooks, culinary assistants, sous chefs and utility staff.


Chef Jorge’s goal is to make sure that every event is more spectacular than the last.

REBECCA GONZALEZ

Operations Manager

With over 20 years in the food industry, Rebecca Gonzalez joined the True Flavors team in 2022 as the Culinary Sales Manager. Her love for food began at a young age and led her to attend the French Culinary Institute in New York City. During that time, she had the opportunity to enhance her expertise in both culinary arts and management. She pursued further educational opportunities that led her to Italy to study in a program through the La Scuola Internazionale de cucina Italiana. All these experiences led her to pursue a career in kitchen and restaurant management working for various corporate companies to improve customer service and overall service for customers.

 

As a part of the True Flavors team, she is working to provide exemplary customer service and ensure seamless execution of events. In her spare time, she enjoys cooking, gardening, and spending time with her husband and their three children.
